Easy & Healthy Banana Pancakes!

Ok, first things first, happy June! I get particularly excited for the start of June because, to me, it marks the beginning of summer!
I going to be honest here and admit that I am 100% guilty of grabbing a quick toast or yogurt before school and not having a full breakfast (it's better than nothing right?) But when I do have extra time, or during the weekends, I love to make these quick and easy pancakes!
I adore this recipe because its so quick, delicious, healthy, AND has only 3 ingredients! Yes, only 3. It totally beats box mix that contains weird chemically-sounding ingredients!
*I am not taking credit for the making of this recipe, I found different sources with variations of the recipe on Pinterest! I am merely sharing this recipe with my preferences and advice!

You'll Need:
- 1 Banana*
- 2 Eggs
- Spices*
*I prefer using a frozen banana because they are a lot sweeter but it is your choice! I thaw mine in a bowl of warm water for 5 minutes before.
Lets Get Cooking!
1) In a small bowl, mash up the banana with a fork until it is a similar consistency to apple sauce. You can use a fork or metal whisk for this.
2) Whisk both the eggs and a pinch of spice in. At this point, the mix will become more liquid, like batter!
3) Heat up a pan on medium heat-high heat and grease it. You can use just about anything (butter, spray, oils)
4) Pour your mix onto the pan slowly, watch how much they spread! You can decide how big you want the pancakes to be, I kept mine about 3 inches in diameter.

5) After 1-2 min, the edges of each cake should begin to look firm. Test to see if you can flip them by slipping a thin spatula under. If the cake is brownish on the other side, flip it!
Since they are pretty thin, I put the spatula underneath 1/3 of the cake, lift up, and lay it down gently.
6) Cook the other side until brown. (Another 1-2 minutes)

Spruce 'Em Up!
Now its time to add your favorite toppings! I chose to use strawberries and, of course, some maple syrup! You can use chocolate chips, chia seeds, jam, or almond butter for some extra protein!🍓
That's all! I told you they were easy! Now you can enjoy some delicious pancakes that are healthy and rich in protein! They are also pretty photogenic if you want to snap a picture for the gram.📸
